Project title:  Culinary Moves: A Digital Folklore Platform

Purpose:  The objective of this project is to collect, archive (at the University of Alberta) and share stories of immigrants in Alberta to help us better understand their immigrant experience through food culture. We want to give voice to hard working migrant chefs who work behind the scenes preparing mouth-watering delicacies for the Canadian public, but whose personal stories remain unheard. You will be asked to a) name your favourite dish and tell us where, when and how you learned to prepare it, b) to tell us about the traditions and customs associated with this dish in your place of origin and why it is so special to you and to your family here, c) you will asked if there are any ingredients particular to this recipe that are found only in your place of origin and how you source these ingredients here, d) you will be asked if you have you adapted your recipe to the Canadian context and to tell us why and how you have done so? e)you will asked what it is that you most enjoy about your profession as chef/food professional /restaurant owner in Canada?

 

You have the possibility of uploading your story as a text and to include picture, audio and video files. The researchers reserve the right to make minor editorial changes and to withdraw material that is irrelevant of offensive.

 

Participation is voluntary. Please do not be obliged to answer any questions that you find objectionable or which make you feel uncomfortable. You have up to 15 days to withdraw your submission by writing to culinary@ualberta.ca

 

The plan for this study has been reviewed by a Research Ethics Board at the University of Alberta. If you have questions about your rights or how research should be conducted, you can call (780) 492-2615.  This office is independent of the researchers.
